Abstract
Dünyanın pek çok yerinde üretilen ve farklı biçimlerde sunulan kahvenin kültür hayatımızın
zenginleşmesinde de önemli katkıları olduğu görülmektedir. İşletmelerin rakiplerine göre farklılığını
gösterebilmek için kahvenin sunulduğu mekânlarda önemli rol oynamaktadır. Çalışmada Türk
kahvesinin gelişim süreci anlatılmış ve Nevşehir örneğinde Türk kahvesi tüketilen mekânların
seçimini etkileyen faktörlerin belirlenmesi, Türk kahvesi tüketim amacı ve tüketim alışkanlıkları
tespit edilmeye çalışılmıştır. Araştırma, Türk kahvesi tüketen 409 kişi üzerinde anket tekniği
kullanılarak yapılmıştır. Belirlenen beş faktörün algılanma düzeylerinin demografik değişkenlere
göre farklılık gösterip göstermediğini test etmek için yapılan tek yönlü varyans (MANOVA) analizi
sonucu tüketicilerin eğitim durumu, meslek ve gelirleri itibariyle farklılıklar bulunmuştur. Yapılan
t-Testi sonucunda ise tüketicilerin cinsiyetleri itibariyle hizmet düzeyi ve fiziki ortam olarak
adlandırılan faktörlerin algılanmasında, medeni duruma göre ise fiziki ortam adlı faktörün
algılanmasında farklılık bulunmuştur.
Coffee, produced in many places in the world and presented in different forms, has also made important contributions to the enrichment of our cultural life. It plays an important role in the places where coffee is served in order to show the difference between businesses and their competitors. Turkish coffee development process has been explained in the study and determination of factors affecting the selection of Turkish coffee in Nevsehir sample, Turkish coffee consumption purpose and consumption habits have been determined. The research was conducted by using survey technique on 409 people who consumed Turkish coffee. With the analysis of one way variance (MANOVA) which was performed for testing whether 5 factors perception levels according to demographic variables, some significant differences were found between the education status, professions and income of consumers and their perceptions of these factors. As a result of the t-test, there is a difference in the perception of the factors of service level and physical environment according to the genders of the consumers and also there is a difference in the perception of the physical environment according to the marital status.
